Midwest Machine’s Proportioning Saws are specifically designed and custom built to automate your retail meat cutting process. They are ideal for both boneless and bone in beef and pork sub primal portioning. They can also be utilized for portioning frozen fish. These automated retail meat saws eliminate all safety risks normally associated with band saw operation. Product stagers load trays far away from the blade and depress the cycle start buttons. Light curtains protect the cut zone. Designed to be in stalled as a mirrored pair in a dual saw application, one operator typically loads and monitors two saws simultaneously. Trays and clamps are specially designed for each primal cut and are easily changed over to accommodate change in product flow. Many levels of programming are available, the base saw cuts a repeated thickness or preset variable thicknesses, but the full potential of the saw is seen when utilizing the optional Smart Vision System. This system is capable of portioning to specified weights as well as identifying product specification changes through a given piece. (Example: Changing from a Porterhouse weight/thickness specification to a T-Bone specification while portioning a beef short loin.) This machine is best utilized when used in line with Midwest Machine’s Bone Dust Removal System.
